Ingredients
  1. 1kg tomatoes
  2. 3 fresh goat's cheeses
  3. 250g readymade puff pastry
  4. 6 black olives
  5. 1 tbsp thyme
  6. 1 tbsp oregano
  7. Freshly ground black pepper
  8. Flour to dust the cutting board
  9. Extra virgin olive oil for serving
Instructions
  1. Pre heat the oven 180°C/gas 4.
  2. Slice the tomatoes.
  3. With a fork, mash the goat's cheeses.
  4. Cut the puff pastry into 6 circles - 10cm diameter - and place on an oiled baking sheet.
  5. Bake the pastries for 5 minutes. Let them cool.
  6. Spread the goat's cheese paste over the pastries, and place the tomato slices on top.
  7. Dust with herbs and put an olive in the centre of each tart.
  8. Bake in the oven for a further 10-15 minutes.
  9. Pour a little olive oil over the tarts, and some black pepper.
