1. Guacamole
First on our list of Mexican starter recipes is Guacamole – the famous avocado-based dip, and probably the most well-known Mexican recipe, let alone starter recipe. It’s now a firm favourite in International and American cuisine, as a dip, or simply paired with our Lightly Salted Tortilla Chips. In addition, serve it alongside our Super Smoky Chipotle Salsa.

2. Mexican Salad
Our Mexican salad is proof that starter salads never have to be boring! It’s light, fresh, colourful, satisfying and a tiny bit spicy (but just the right amount!). Our Chipotle Paste has many uses, but it’s also a great ingredient to make dressings, so for this recipe we’ve popped in a spoonful of this to make a quick and spicy dressing.

3. Quick Queso Fundido with Roasted Chipotle Cauliflower
Next on our list of favourite Mexican starters is our Quick Queso Fundido with Roasted Cauliflower. We use gruyere cheese for this queso dip which has good melting properties. Here, we have roasted cauliflower flavoured with Gran Luchito Chipotle Honey glaze and a bit of Smoky Chipotle Fajita and Taco Mix. Served with warm tortillas, guacamole and a bit of fresh salsa.
4. Easy Quesadilla Recipe Luchito Style
This Easy Quesadilla Recipe Luchito Style has to be our favourite! If you were looking for a simple recipe to nail the perfect quesadilla, this is it! They are super simple and contain chorizo, red onion and grated cheese. Our Chipotle Honey is used to crisp up the chorizo in the pan, and everything is filled up into our Soft Taco Wraps. Finally, our Tomatillo Salsa is dolloped on top for a zingy finish.

5. Vegan Nachos
Next on our list of starters is a vegan recipe. Mexican food adapts very well to meat-free cooking, as a lot of Mexican recipes use fresh produce. Whether you are vegetarian or vegan, or would simply like to switch things up and have a meat-free starter, these Vegan Nachos are for you. For this recipe, we have loaded them with butternut squash, avocado, Refried Beans, Tomatillo Salsa, and lots more!

6. Cheese Empanadas
These Easy Empanadas with Chipotle Honey, sweet potato and brie are easy to make using pre-made shortcrust pastry sheets, full of flavour and spice and a total crowd-pleaser. Pastry circles are filled with this tasty mixture and add a final spoonful of Chipotle Paste for an extra kick. When baked, the cheese melts inside and then combines with the delicious sweet potato and chipotle for a flavour match made in heaven.
7. Mexican Chicken Soup
Next up on our Mexican Starters list is our Chicken and Black Bean Chipotle Soup. A delicious and hearty soup, that’s very easy to make. It’s the perfect way to also use that leftover rotisserie chicken in your fridge. Our Chipotle Paste is the star of this recipe alongside our delicious Cantina Beans! Finishing your soup with crumbled Lightly Salted Tortilla Chips on top is the icing on the cake.

8. Easy Chicken Nachos
Our Easy Chicken Nachos is a great recipe that is simple to put together and works well as a starter. Perfect for two people, you can easily increase this recipe for more people. For this recipe, we’ve coated chicken thighs in a delicious quick marinade made with Chipotle Paste, lemon juice, parsley and olive oil. Refried Beans are involved, along with a Fire Roasted Serranos based dressing, dollops of creme fraiche, grated red Leicester, and all course the all-important Lightly Salted Tortilla Chips!

9. Mexican Molletes
Finally, on our list of Mexican starters, we have Mexican Molletes – like a toastie but taken up a notch! Crusty bread is topped with refried beans and grated cheese. The mollettes are then placed under the grill until all the cheese melts and is lovely and gooey. Best served with our Chipotle Salsa.
